The meat, poultry, and seafood processing industry use large volumes of water, given the importance of food safety in the industry. Water is consumed at the washing stage, equipment cleaning, dehairing, thawing, eviscerating, scalding, and further processing the main product and byproduct. Wastewater for these facilities typically contains high concentrations of blood, tallow, mucosa, free oil and grease, and fats and hair, which results in high concentrations of biodegradable organics, BOD, COD, TSS, nitrogen and phosphorus.
